Peel the carrots with the professional peeler and grate into fine julienne strips with the Fine Julienne blade. Wash and roughly chop the parsley.
For the dressing, put all the ingredients in a jam jar. Grate the long pepper with the Spice Mill into it and shake well. Pour the dressing over the carrots mix all together and fold in the parsley. Leave the carrot salad to marinate in the fridge.
